it's a pie world

every year, well starting last year, marsh and i decided to make a thanksgiving pie. last year we opted to make a blueberry pie. it turned out amazing, surprising i know considering who made it! haha. the only malfunction we had last year was when marsh tried to cut into the pie with a rather sharp knife he managed to cut straight through the entire pie including the pie pan. it was hilarious!
i already explained our busy thanksgiving day this year so we had every intention of making our pie wednesday night. we randomly saw a fresh bag of cranberries at publix and both decided it was a great idea to buy them. then when we got home, realized we had no idea what to do with fresh, extremely tart, cranberries. thats when we decided this year's pie would be a cranberry pie. you don't hear about cranberry pie much which made it even more intriguing!
after slaving away in the kitchen all wednesday night, scanning around the small kitchen and noticing all the dishes were dirty plus there was no more counter room, we opted to not make our pie that night. not to mention the recipe i found called for us to smash the cranberries. marsh really tried to smash them but they would not budge!
i thought maybe we would make it the next morning before our day began but
that didn't happen either. then friday we spent the day rooting for the tigers then shopping for christmas presents. i spent the day saturday making my amazing tree skirt and just hanging out. then watching oklahoma ridiculously beat oklahoma state causing the entire bcs to explode in confusion (and then stupidly make the wrong decision for the big 12 championship, considering texas beat both teams playing) sorry, just had to get that out!
anyways, we had pete over that night so our pie did not get made. i did make spinach & artichoke dip though. it was my first time to do so without trace, and it didn't turn out the best. no comments please! ;) the problem really came from when i opted to leave out the 1/4 cup of mayo. i thought surely it can't do much for the dip and pete is allergic to eggs, something that mayo contains. it turned out more in a paste form then creamy, i guess 1/4 cup of mayo really does do something.
sunday night rolls around and i made an executive decision: we must make our pie before the weekend is over! i found a simple nantucket cranberry pie recipe. we strayed away from the recipe just a bit, by leaving out the walnuts it called for, baking it in a pie crust (it just said to use a pan), and adding a crumble topping made with oats. we were both nervous about the outcome, especially seeing the consistency of it pre-baked. i moved the pie to bake on a cookie sheet to avoid any explosions in the oven and in doing so spilled some of it all over the counter and floor. that was mishap #1. mishap #2 came from the overflowing pie in the oven. guess i filled it up too much! haha. aside from the way it looked, it was
surprisingly delicious! this just proves that you can't judge a book by its cover! i am so proud of us! (i am brave enough to post this picture, so be nice! ;) hahaha!)
now we have 2 thanksgiving pies under our belt and i know we have many more to come!
